Another Day in the Life

     Hello again! I must say that today was a great day. Our four year old and I spent the day together doing errands and watching movies. I also had a giant Scentsy order come in today that I get to deliver! I figured today I would share another recipe with y'all as well as another Scentsy deal and gift ideas. 
     This morning after running to the bank, I came home and stuck a roast in the crock pot. Like I need any excuse to use my crock pot! Hubby says this one was "awesome" and he had.... well, a couple plates. ;) This one was easy peasy and was ready when the hubbs walked through the door!

             Pot Roast Sliders

Ingredients:
1  2-3 lb. beef roast
1 cup water
1 cup salsa
1 envelope Onion soup mix
1 envelope Italian dressing mix
1 envelope Ranch dressing mix


Directions: 
Whisk together water, salsa and seasoning packets. Place roast in slow cooker. Pour seasoning mixture over roast. Cook on low for 8-10 hours or on high for 4-5 hours. 

You can do a regular roast or make sliders. I chose to make sliders. :)

For the Sliders - 
You'll need: Roast (of course), sliced swiss cheese and King's Hawaiian Rolls.
Shred roast. Cut each roll in half and place on baking sheet. Place a slice of swiss cheese on the bottom half of roll. Place baking sheet in oven with broiler on low. Broil for 1-2 minutes until edges are golden brown and cheese has melted.
Make sure you watch the oven! Our first batch came out a little toasty. :) 


   And of course we can't forget the side dish, right?! To go with the sliders, I did a simple green bean casserole. 
You will need: 2 cans of French style green beans, 2 cans Cream of Mushroom soup and French fried onions. I used what we had leftover from last time, which was probably a little less than half a bag. This is for a family of 3 so if you have a bigger family you might want to double this recipe. 


  Now, simply stir together the cans of green beans and cream of mushroom. Pour it into a small pan and sprinkle the onions on top. Then, stick it in the oven on 350 degrees for about 15 minutes or until the onions turn slightly brown. 





   There you go! A simple and delicious meal for you busy moms out there.
